             So you want to be a cook team?

If you've ever asked yourself that question then you should have been at the Florida Bar-B-Que Association's Annual Membership Meeting and Fun Cook held in the rolling hills of Lake County, just a stone's throw northwest of Orlando, over the Labor Day weekend.

Forty-five or fifty aspiring pit bosses and bossets, some of them signed up for the next day's competition, gathered under the Clerbrook RV Campground's open air pavilion as Chip Faul and Gary Leyman, aka Sorry Boys Championship BBQ Team, spent the better part of the afternoon disseminating volumes of useful information.  

After the proper greetings and disclaimers, Chip started out the business part of the gathering by discussing the FBA rules and regulations one by one (including an in-depth look at how to avoid a lot of first timer's issues), where to look for and how to sign-up to compete in a sanctioned cook off and what to bring.  Gary then took the attendees on an in depth journey through cookers, fuels, seasonings/sauces and marinades/injections, and the different cuts of meats that make up the competition categories.  Quite a bit of time was spent by both speakers discussing food handling safety, one of the most important things for all cooks to understand.  

At the conclusion of the classroom portion the entire class was invited to help prepare samples and pack competition boxes in all four categories (ribs, brisket, pork, and chicken) for the seven tables of folks that were attending the FBA Judge's Seminar in the air conditioned clubhouse next door.  Several of the boxes were packed in such a matter as to elicit a disqualification in order for everyone to see some of the more obvious things that you shouldn't send to the judges.  There were plenty of leftovers for the eager crowd to sample.  No one went away hungry.

At the end of the day all involved seemed to have enjoyed themselves and were looking forward to trying out their new "tricks of the trade."  As for those two Sorry Boys, they were last seen relieving their parched throats and doing what all cook teams love to do the most -- cleaning up.
