The Sorry Boys like to serve up a great smoked turkey any time.  Perfect for country picnics or a day at the beach. This recipe is a Sorry Boy Holiday Tradition, Thanksgiving and Christmas Special. We love talking turkey.

For the traditional Slo-Smoked Bird you will want fruit wood or soaked wood chips.  The Sorry Boys, being from Florida, like to use citrus wood.  Apple, peach or cherry also works real good.  Fruit woods leave a more delicate flavor as compared to hickory, oak, or mesquite.  Whatever taste you prefer.  

 For a 12-15 lb. gobbler you are looking at 8-10 hrs at 225-250 deg.F  To get started soak the Old Yard Bird in Sorry Boys Brining solution over night (Specialty Sauces), this adds moisture and the championship flavor.  

Then rub old Tom down with a generous coating of SorryBoys BarnYard Chicken Seasoning, inside and out.

Fold the wing tips back under the bird to expose the breast.  If it has one of those pop-up thingies get rid of it. They don't work for slow smoking.

Place in cooker and smoke 4-6 hrs according to how smokey a taste you prefer.  Wrap in foil and continue to cook another 2-4 hrs.  This strutter will be done when the breast and thighs are 160-180 deg.F  Use a thermometer don't guess. 

 He's had a busy day and he'll be pretty wore out, so let him rest at least 30 min. before carving.

There's a lot of play in these times for individual bird sizes, differences in cookers and plenty of adult beverages.  That's why I like to cook mine way in advance, chill and reheat for serving, or serve cold.

Makes great holiday sandwiches.
