The Sorry Boys Pulled Pork, or Pork Butts are truly the pride of the south, consistently scoring in the top ten at every event.  The secret comes from cooking to internal meat temperature, and our sauces and seasonings that are available to the public by following the "Products" link at the left of the screen.  Put your order in now and start cooking award winning barbeque in your own backyard.

Pork Butts need to be slow cooked for ultimate taste and tenderness.  Allow 12 - 16 hours of cooking time.  Remember, it is the long slow cooking process that brings out all the sweet natural flavors of the pork.  Don't try to rush it. 

 

Sorry Boys Championship Pork Butt Recipe

 

1 8-10 lb.        Boston Butt   (bone in)

1-12oz.           Bottle Sorry Boys Injectable Marinade Mix

36oz.              Apple juice or Cran Apple

1-5oz              Bottle Sorry Boys Original Seasoning 

16oz.              Sorry Boys Moppin Sauce  *(see Specialty Sauces page)*

 

Trim excess fat from butt.  Mix Sorry Boys Injectable Marinade and  juice.  Using meat injector, shoot as much liquid into the roast as it will hold.  Season outside with Sorry Boys Original Seasoning.  Wrap in plastic and let sit for at least 1 hour. Allow meat to come up to room temperature.  

Fire up smoker and bring up to cooking temperature. (250 deg.)

Place meat in smoker fat side down.  Cook for 3 hours mopping every 30 minutes with Sorry Boys Moppin Sauce.  Rotate and turn meat after 3 hours and continue mopping.  Cook until internal meat temperature reaches 150 deg. 3-6 hours

Actual times will vary according to individual cooking circumstances. 

When internal meat temperature reaches 150 deg.  double wrap butt in foil and continue cooking until internal temperature reaches 190 deg.  3-6 hours

When meat reaches 190 deg. remove from cooker and place in insulated cooler or holding box.  The butt will continue to cook even after it is removed from the  heat source.  

1 hour before serving time check internal temperature again.  Meat should be at 155-160 for proper pulling temperature.  If it is above temp. allow to cool.  If it's below, place back in cooker and warm back up to temperature.

Pack box as usual, or chop meat for sandwiches.  Pour extra moppin sauce over meat for a truly southern flavor.
