This is another special cooking sauce made up of our  other products. It is a very unique tasting sauce, designed around cooking sauces commonly used in the Carolina's. This sauce is very thin in consistency. It is to be mopped or slopped on pork butts, shoulders, or whole hog, during the long slow cooking process.  It builds a very nice bark on the outside of the meat, while tenderizing and adding flavor to your barbeque.  This sauce can also be poured over the pulled meat at the end of the cooking process.  The crushed red pepper gives the appearance of a very spicey sauce, but the vinegar has a way of pickling the pickled peppers that Peter Piper picked.  It is definitely a very southern style flavor.

 

Sorry Boys Southern Style Moppin Sauce

 

1 gal.         Apple Cider Vinegar

1 12oz.       Bottle Sorry Boys Marinade Mix

1 12oz.       Bottle Sorry Boys Cajun Marinated Garlic

2 Tbs.         Olive Oil

3/4 cup       Crushed Red Pepper Flakes

1                Empty gallon container

 

Strain the marinated garlic and add the liquid to the empty gallon container.  Process the garlic in a food processor with the olive oil to a medium chop.  Add this to the container.  Pour in the marinade mix and the red pepper.  Fill the container to the top with vinegar.

Try to prepare this sauce at least 1 day in advance.  It definitely gets better as it ages.  Keep it tightly sealed in a cool place and it will last a long time. 

Mop meat at least every hour during the slow cooking process.  One gallon should be enough for 4-6 butts.

We use almost 5 gallons while cooking a whole hog.

It sure is good!       Mmm!  Mmm! Mmm!
