Competition chicken is probably the most difficult event because of all the many ways there are to prepare chicken. Anything goes in this event. The Sorry Boys scored consistently using the following recipes. We contribute our success to the use of the Sorry Boys products, mainly our seasonings in this event. Order our Barnyard Chicken Seasoning and Sorry Boys Original Seasoning at the Products link at the left of the screen. Sorry Boys Competition Chicken 8-10 Boneless chicken thighs 1-5oz. Bottle Sorry Boys Barn Yard Chicken Seasoning 1-5oz. Bottle Sorry Boys Original Seasoning 1-12oz. Bottle Sorry Boys Sweet and Tangy BBq Sauce Lay out the chicken thighs skin side down and sprinkle the underside liberally with Sorry Boys BarnYard Chicken Seasoning. Roll thighs, tucking skin flaps and securing with tooth pick. Season outsides liberally with Sorry Boys Original Seasoning. Place in 250 deg. cooker and smoke for 2 hours. Remove from smoke and cook over medium heat charcoal for approximately 30-60 min. until internal meat temperature reaches 160 deg. and outer skin crisps. Remove from direct heat and baste with Sorry Boys Sweet and Tangy Barbeque Sauce. Keep warm and continue basting until serving time. Remember to remove toothpicks prior to packing turn in box. This has been a big winner for the Sorry Boys!
Sorry Boys Beer Can Chicken
What You’ll
Need
1
whole fryer chicken 1-5oz.
Bottle Sorry Boys BarnYard Chicken Seasoning 1-5oz.
Bottle Sorry Boys Original Seasoning 2Tbs
Sorry Boys Marinade Mix (uncut) 1-12oz.
Can of your favorite Beer (preferably warm) Olive
Oil Step
1. Pour out 1/2 to 3/4 beer (this
does not constitute alcohol abuse because it's warm), or add to water pan. Add the Sorry Boys
Marinade Mix to can, plus 1 Tbs. Sorry boys Original Seasoning.
Beer
can should only be about half full to allow the solution to boil and steam
quicker. Step
2. Insert your hand into the
chicken between the skin and the meat, from the neck hole, and skin the
chicken 2/3 of the way down the breast, the back and around the wings and
legs. Be sure that the skin stays attached to the meat around the bottom 1/3
of the yard bird. This is what will allow the tenting effect that you will see
as the strutter cooks.
Step
3. Liberally sprinkle Sorry Boys
BarnYard Seasoning inside the chicken between the skin and the meat, working
the seasoning down around the legs. Don’t be bashful with the amount of
seasoning you use because we have plenty more where that came from! Besides,
the seasoning is what makes old Roosty Nester taste so GOOOOOD!!!
Step
4. Pull the neck skin over the
hole and secure together with a toothpick. As the chicken cooks this will
stick together and form a seal to trap the steam that will be emitted from the
beer can, forcing the flavors through the meat.
Step
5. Place your bird over the beer can, through the butt end opening. (I use the
4-can holder from Uncle Buster) www.drunkchicken.com
Brush the chicken with Olive Oil and
sprinkle with Sorry Boys Original Seasoning to ensure a tasty skin when
served.
Step
6. Cook in a gas grill, bullet
cooker or over indirect charcoals for 1 1/2 - 2 hours, or until internal meat
temp reaches 160 degrees. Check both thigh and breast.
Allow to rest and cool
to 140 degrees and slice in any preferred method.
This is the easiest way
to cook several chickens at one time because of the lack of maintenance and
prep time required. Note
how the chicken has swollen like a balloon due to the seal formed around the
beer can and at the neck, which results in a small pressure cooker being
formed by the boiling mixture in the beer can. This is better than any
rotisserie or grilled chicken, and you never have to turn or baste it the
entire time. You will never want to cook chicken another way. Enjoy!
